Beans with Tomato Sauce

This easy and quick Beans with Tomato Sauce recipe is a simple side dish perfect to serve with any main course. I’ve made them many times and never photographed or included them among the side dish recipes on my blog because they are really simple. However, after posting the photo on my Instagram profile, I saw many of you asked for the recipe, so here I am today writing it on the blog so you can consult it and especially make it whenever you want.
In my version, there is chili pepper, but if you don’t like it, you can easily skip it; the result won’t change. You can prepare the Beans with Tomato in less than 25 minutes, and if you want, as in my case, using canned beans.
If you like soups, vegetable soups, or broths, you absolutely have to try my Vegetable Soup with Pumpkin. An easy and delicious recipe perfect for fall!

Ingredients for Beans with Tomato Sauce for 4 people:

  • 28 oz canned borlotti beans
  • 14 oz tomato pulp (in chunks)
  • 1 onion
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch chili pepper
  • to taste parsley (finely chopped)
  • to taste extra virgin olive oil
  • to taste water (to rinse the tomato can)

Tools

  • 1 Pot
  • 1 Wooden Spoon
  • 1 Knife
  • 1 Cutting Board
  • 1 Lid
  • 4 Small Bowls

Preparation of Beans with Tomato Sauce:

  • The first thing to do is chop the onion into not too thin strips with a knife.

Pour the extra virgin olive oil into the pot and sauté the onion.

When it is golden brown, add the can of tomato chunks or pulp. Pour a little water into the can to not leave tomato inside the container.

  • Add a pinch of salt, pepper, and chili pepper (which you can omit if you don’t like it).

Cover with a lid and let it cook for about 10 minutes over medium heat, stirring occasionally with the wooden spoon.

  • After this time, add the borlotti beans, in my case, canned ones. Adjust salt and pepper if necessary.

  • Continue cooking over medium heat for another 10 minutes or so, do not go beyond that, or the beans will break and become mush!

Sprinkle with finely chopped parsley and serve hot in terracotta bowls.

    Enjoy your meal!!!

Storage:

You can store the beans with tomato sauce in a container with a lid in the refrigerator for 3 or 4 days.
