As a substitute for breadcrumbs, you could use panko (in the notes below I will add the recipe with the link to prepare it at home). The filling can vary, not necessarily mozzarella and anchovies; in fact, today I used a breadcrumb topping that I had left from a previous preparation. Of course, I added all the necessary ingredients, but as you know, anything goes in the kitchen, so you can change the ingredients as you like. - 3/4 cup g breadcrumbs
- 1 teaspoon chopped parsley
- 1 clove garlic
- 1/2 cup g fresh cheese (such as Galbanino)
- 1 slice ham
- 1 1/2 teaspoons g fine salt
- 2 tablespoons g extra virgin olive oil
- 1 tomato
- 1 pinch pepper
- 2 teaspoons g grated Parmesan cheese
- 2 teaspoons g breadcrumbs

Steps
To prepare the stuffed zucchini flowers, I used the seasoned breadcrumbs I had used to fill small Sicilian eggplants. In the notes at the bottom, I added the recipe with the link if you’d like to check it out.
Quickly wash the zucchini flowers and check if there are any ants or other insects inside. I usually run water through them to flush anything out. In a bowl, pour the breadcrumbs: if they are fresh, even better. Season them with salt and pepper, the tomato cut into small pieces, as well as the cheese and ham, the chopped garlic and parsley, a couple of tablespoons of olive oil, and grated Parmesan cheese.
Fill the zucchini flowers with the seasoned breadcrumb mixture. Brush the stuffed zucchini flowers with olive oil and roll them in breadcrumbs.
Place the ready zucchini flowers on a baking tray and set it in the air fryer. Cook for 10 minutes at 356°F.
This is the final result: crispy zucchini flowers on the outside and very soft and melty on the inside.
