Christmas Tree Cakes with Rice Flour

Using these tree-shaped molds, I made two Christmas Tree Cakes with rice flour, chocolate chips, hazelnut crumbs, and sugar sprinkles. I had already bought these two molds last week, they are medium-small, and I hadn’t yet found a recipe to use them.
Last night I decided, Bea get into the kitchen, otherwise Christmas will come and you won’t prepare that Christmas dessert anymore! As you can guess from the photos, I also tried to create some balls with Dulce de Leche cream so I took the opportunity to taste it.


I have never used Dulce de Leche before and I still don’t know what to prepare with this ingredient, so if you have any ideas, let me know in the comments or via chat on my blog’s social channels. I must say it was really an unexpected and much-appreciated gift from my favorite Argentine: Alejandro!
So here I am with the recipe for this sweet Christmas Tree perfect for breakfast on December 25th don’t you think? I turned up the red a bit too much this morning but I really need to feel the Christmas Spirit because I don’t remember ever having such a gloomy period. I hope you like these sweet Christmas Trees and if you don’t have rice flour don’t worry, you can use regular all-purpose flour and as with other times don’t despair if you don’t have Kefir colato there are always the classic 125g pots of plain yogurt available. Now let’s cut the chatter and get to the actual recipe for these two desserts!

Ingredients for Two Sweet Christmas Tree Cakes:

for two medium-small molds

  • 1.5 cups rice flour
  • 0.16 cups potato starch
  • 1 tablespoon baking powder
  • 1 egg
  • 0.5 cups plain natural yogurt (in my case 125g of milk Kefir colato)
  • 0.13 cups vegetable oil (or 30g of milk)
  • 2 tablespoons sugar
  • to taste chocolate chips
  • to taste hazelnut crumbs
  • to taste sugar sprinkles
  • to taste brown sugar

Preparation of Two Christmas Tree Cakes:

The preparation of these two Christmas desserts is really very quick, in fact when I thought of these small cakes I imagined that they could be prepared on Christmas Morning to have breakfast together with the family with a warm and super delicious dessert.

  • The first thing to do is to turn on the oven and set it to 356°F in static mode.

    Then take a bowl and crack the egg into it, add the 125g jar of plain yogurt or, as in my case, 125g of milk Kefir colato.

  • Work with the whisk at low speed and add the two tablespoons of sugar, the 30g of vegetable oil or milk, to your taste and incorporate the ingredients well.

  • Now we can pour in the sifted rice flour and potato starch together with the tablespoon of baking powder.

    Continue working with the electric whisk until you get a foamy and lump-free mixture.

  • With a drizzle of vegetable oil, grease the Christmas Tree-shaped molds and pour our mixture up to 2/3 of the molds.

    Sprinkle with chocolate chips, sugar sprinkles, hazelnut crumbs, and finally with some brown sugar.

  • Bake the two molds and let them cook for at least 25 minutes, mine were already well cooked with this timing. Always perform the toothpick test before turning off the oven.

    You can serve the Christmas Tree Cakes without adding the classic powdered sugar because they are already beautiful like this, don’t you think?!?

Storage:

You can store the Christmas Tree Cakes in a cake holder for up to 4 or 5 days from preparation.

Variations:

As I mentioned earlier, if you don’t have rice flour you can prepare the two cakes with regular all-purpose flour, and the same goes for plain yogurt, you can choose skimmed or a flavor like hazelnut, pistachio, stracciatella, or even a banana flavor wouldn’t be bad.

Notes:

Of course, the mold used in this recipe is tree-shaped, but nothing prevents you from trying this dessert with other molds, if you have them you can make mini plumcakes, I use these here or you can try making muffins, maybe not too many since there are only 200g of flour but you will see that you will enjoy an excellent dessert for Christmas Morning breakfast!
