I’ll finally reveal my Cream for Tiramisu recipe
You have asked me for it so much and I have always sent it to you privately because, in fact, my blog doesn’t have Cream for Tiramisu recipe or my Tiramisu recipe

I would say the web is full of recipes to follow for making this dessert, but then every cook has their own version: some with cream and some without, some with mascarpone and some without, some with one egg and some with two, some with powdered sugar and some with classic sugar, so go wild because there is really something for everyone.
Now, however, after the umpteenth time I wrote the recipe via chat of my version, I decided to publish it so it can be accessible to all of you!

Ingredients for Cream for Tiramisu for 4 people

  • 2 eggs (at room temperature)
  • 8.8 oz mascarpone (removed from the fridge 30 minutes before preparation)
  • 2 tablespoons sugar
  • 1 pinch salt

Preparation of Cream for Tiramisu

  • Let’s start preparing the Cream for Tiramisu by separating the yolks from the whites. Put the yolks in the bowl and the whites in the pot. I remind you again that the eggs must be at room temperature because often in your comments or chat you tell me that you had just removed them from the fridge and this is not good.

  • Proceed by whipping the egg whites with the pinch of salt. This is the most important step of the recipe. You need to be patient with the electric whisk to whip it well.

    It should look like a cloud, and as you can see from the photo, a foamy mass that doesn’t slide off into the pot. I do this step in the pot because I think the contact of the egg whites with a steel element helps speed up the work; then, it could also just be my impression, but I’ve been preparing it this way for years.

  • Wash the whisks well and move on to work the yolks. Add the sugar and work the mixture until it becomes a nice light yellow and frothy.

    With a spatula, add half the dose of mascarpone and incorporate it into the yolks, then add the remaining dose.

  • It’s time to combine the two preparations. Always with the spatula pour the whipped egg whites into the bowl with the yolks and mascarpone, folding it from bottom to top.

  • We have thus obtained the cream for the tiramisu; we just have to cover the bowl with plastic wrap and let it rest in the fridge for at least an hour before using it to make the Tiramisu.

The eggs must be at room temperature and medium-large. The mascarpone must be taken out of the fridge at least 30 minutes before preparing the cream.
