With the Baked Salmon with Mustard recipe, I’m officially kicking off the recipes for the Christmas Menu!
I’d say it’s time, haven’t we finally reached the 1st of December of this very strange year?! Although it won’t be a Christmas like all the others, taste shouldn’t be missing at the table; we deserve it after the year we’ve had, separated but united by a deep sense of fear for the future.
However, not to betray our traditions and not to forget that Family is important, I want to propose a simple but impactful dish to bring color and flavor to the table.

Start preparing this fish-based second course about an hour before cooking.
Arrange the two salmon fillets on a baking sheet covered with parchment paper.
Create a layer with the mustard on top so the salmon absorbs the flavor well. Let it rest for about 30 – 40 minutes.
Then sprinkle with parsley, a pinch of salt, and pepper.
Preheat the oven to 350°F (180°C) on static mode and when it’s hot, bake the two salmon fillets without adding any other ingredients.
The cooking time varies a bit depending on the size of the fillets you have; I let it cook for about 30 minutes. You will see the mustard form a nice golden crust on top and the salmon reaches the right level of tenderness and that beautiful pink color.
Serve the hot salmon with a good seasonal side dish and a great glass of wine.
Enjoy your meal!!!
Variations:
If you don’t have Paccasassi Mustard, you can make the dish with classic mustard.
