Pasta with Sausage without Cream

The Pasta with Sausage is not really a recipe to present, it’s a small variation to the usual tomato pasta dish that you often tire of consuming. My version is without cream but with a dash of milk towards the end of cooking which makes everything creamier.

As many of you may know, the sausage or “salciccia” as it is commonly called in many Italian regions is one of the most popular cold cuts. It can be called many names depending on the ingredient variations it contains. There is: luganega, salamella, salamina, salamino which should not be confused with the more classic salamis, the salametto, bardiccio, rocchio or zazzicchia. How beautiful is Italy and its myriad faces, especially in the kitchen where it is a crescendo of flavors, traditions, and specialties that make our country great worldwide.

Returning now to my recipe, for two people a single sausage will suffice, in my case we are in the Marche region, so there will be no need to add too much salt, pepper, and garlic because it is already well seasoned and above all it is very tender and the cooking times are short if you cut it into small pieces.

Ingredients for Pasta with Sausage for Two People:

  • 1 sausage
  • 6 oz pasta (in my case, number 7 spaghetti)
  • to taste onion (finely chopped)
  • to taste extra virgin olive oil
  • 1/4 cup milk
  • to taste salt
  • to taste black pepper
  • to taste cheese (grated as you prefer)

Tools

  • 1 Knife
  • 1 Pot
  • 1 Pan

Preparation of Pasta with Sausage:

  • Start preparing the Pasta with Sausage by taking the non-stick pan and sautéing the chopped onion with a drizzle of extra virgin olive oil. Let it wilt over high heat.

    Then add the crumbled sausage in small pieces, the smaller they are, the quicker the cooking will be.

  • Continue cooking everything over medium heat, after about ten minutes add the quarter cup of milk and let it cook for another 5 minutes or so.

    Meanwhile, cook the pasta you have chosen. In my case, number 7 spaghetti which holds up well to cooking and is quite robust.

  • Drain the pasta al dente and toss it in the pan with the sausage, a nice sprinkle of grated cheese, a bit of black pepper and the meal is served!

Variations:

As I mentioned in the preface, every sausage has its own characteristics, in my case I know that I don’t need to add salt to the seasoning but only a bit of salt in the pot where I boil the water for the pasta.

I do not add garlic or too much pepper, if you are used to consuming sausages from your region, you surely know their characteristics and can adjust with the additional ingredients.
