Homemade Burgers

My Homemade Burgers recipe is among the first published on the blog, I think the first photo posted dates back to 2013 and cannot be compared at all to the one that replaces it from today. Fortunately, we grow and learn new notions in the field of food photography and beyond.
Let’s get back to the homemade burgers recipe, like many of you, I have my homemade version. If you feel like it, I would love to read your versions in the comments, so maybe next time I might change it up a bit too. However, I’m not claiming mine is the perfect recipe or the one you absolutely must not miss, indeed as I said I’m curious to try yours, but I can tell you it’s the most popular one at home!
Once a month, my cousin and his two kids request them, my dad writes, “will you make me those burgers with the bun?” when he feels like it, not to mention my friends and their kids, once they try them they have to stop buying those prepared by the butcher and start being good cooks!
Of course, when I don’t feel like preparing them at home, I buy them from my trusted butcher, but they always taste the same, they’re always missing that extra kick that a little addition to the ground meat can provide.
If you want to accompany a side dish to these meat burgers I recommend Potatoes with yogurt and chives sauce so they won’t be the usual oven-roasted potatoes!
So let’s move on to the list of ingredients needed to prepare Homemade Burgers for four people.

Ingredients for 4 Homemade Burgers:

  • 10.6 oz ground beef (or mixed ground meat)
  • 1 sausage
  • 1 egg
  • 1 tbsp milk
  • 1 oz breadcrumbs (or two slices of sandwich bread or bread soaked in milk)
  • 1 oz cheese (grated Grana Padano or Pecorino)
  • 0.07 oz salt
  • 0.07 oz black pepper
  • 0.07 oz nutmeg
  • to taste extra virgin olive oil
  • to taste onion (finely chopped)
  • 1 espresso cup white wine
  • 4 hamburger buns
  • 4 cheese slices (in my case cheddar slices)
  • to taste ketchup
  • to taste mayonnaise
  • to taste mixed salad
  • 8 slices tomato

Preparation of Homemade Burgers:

  • Take the bowl and pour the ground meat into it, forming a well in the center. Crack the egg and add it to the bowl. If you have dry bread slices or sandwich bread, soak them in milk, otherwise add the breadcrumbs and milk along with the egg in the center of the meat.

    Add the sausage and sprinkle with salt, pepper, and nutmeg, I usually add a bit more of the latter. Mix all the ingredients with your hands, if necessary, add a few more grams of breadcrumbs.

  • Now take the burger mold and the wax papers, they are easily available online, and in the tool list, I left you the link to purchase the homemade burger machine.

    Each burger should weigh about 3.5 oz. If you have difficulty with the weight of the meat before pressing your burgers, you can help yourself with a scale.

  • Now take the pan and coat its bottom with extra virgin olive oil. Sauté the finely chopped onion, I generally use a quarter of a white or golden onion, it adds more flavor to the burgers.

    Once the onion is softened, add our four burgers, cover the pan and let them cook for 10 minutes before flipping them to the other side.

  • Deglaze with white wine after flipping them, cover again and let them cook for another 10 minutes. At this point, both sides will have a nice crust, so continue cooking, flipping them occasionally, for another 20 minutes or so.

  • Slice the tomato into not too thick slices and sprinkle with salt. Prepare the salad, we don’t like whole lettuce leaves, so I always cut them into smaller pieces. Warm up the hamburger buns with a toaster or in the oven if it’s on for cooking the fries, and proceed with plating the burgers.

  • The base of the bun, your choice of sauces (I divide them: mayonnaise on top of the bun, then ketchup under the meat, and finally the burger sauce before the bun that closes the sandwich), a cheese slice (in my case cheddar), tomato slices and salad pieces, the burger and the bun! Variations:

As mentioned in the recipe text, there are numerous variations you can make, such as the presence or absence of sausage, the type of ground meat whether mixed or solely beef, the sauces to add, and the type of cheese slice, who knows what else you can come up with this burger recipe!

Storage:

If you have leftover burgers, don’t worry because you can easily freeze them. Once they are completely cold, you can store them in a freezer-safe bowl for a couple of weeks.
