I must admit that many of you have asked me for the Pacca-Pork recipe so you can prepare it at home. I have to say, this sandwich has brought me great satisfaction and continues to do so for the owners of La Locura Bistrot here in Porto San Giorgio. There, it has boldly entered the winter menu, and you can order it and enjoy it comfortably from your couch thanks to their delivery service or visit them for dinner (once it can be done again).
The idea for the Pacca-Pork was quite simple. I wanted a sandwich with the Paccasassi that I discovered during the pandemic, something interesting and orderable by both girls and boys. Something that piques your interest and makes you want to try it, something linked to our territory and that people could appreciate, even with a simple sandwich. So, here came the light bulb moment: my most classic scottona beef burger recipe, a slice of pecorino cheese and grilled mortadella, Paccasassi mayonnaise to tie everything together, pistachio crumbs to add a crunchy note, and finally, the Paccasassi from Rinci Meraviglie di Gusto to complete it all. Here is the recipe for my Gourmet Burger the Pacca-Pork! You can prepare it in the two versions proposed by La Locura Bistrot: mine with pecorino and Paccasassi mayonnaise or with the more classic burrata. Pacca-Pork my recipe
ingredients for two people:
- 2 hamburger, fast food (of scottona beef)
- 2 slices pecorino cheese
- 2 slices mortadella
- to taste pistachio crumbs
- to taste mayonnaise (of Paccasassi)
- to taste Paccasassi del Conero (from Rinci Meraviglie di Gusto)
- 2 hamburger buns
Tools to prepare the Pacca Pork
- Grill
- Stove
- 1 Knife
- 1 Spoon
- 1 Cutting board
Pacca Pork my recipe:
My recipe is very simple, you’ll see! Let’s grill the two scottona beef hamburgers on a grill or in a pan if you don’t have one.
Once the meat is ready, we can grill the mortadella. Cut the two slices of pecorino cheese a bit thick.
At this point, take the hamburger buns, cut them, and heat the two inner parts on the grill as well.
Once the bread is heated, move to a work surface and assemble your Pacca-Pork!
The bottom part of the bun, the scottona beef hamburger, the grilled mortadella slice, a slice of pecorino cheese, two generous tablespoons of Paccasassi mayonnaise, a generous portion of Paccasassi in oil, and finally a good sprinkle of pistachio crumbs.
Here is your homemade version of the Pacca Pork!

Variations:
As I mentioned, you can replace pecorino cheese with burrata, and you can choose whether to still add Paccasassi mayonnaise, which I strongly recommend because it’s delicious and addictive, or not. It’s up to you!
