Savory Tart with Asparagus and Bacon

Today I present the recipe for the Savory Tart with Asparagus and Bacon. A simple tart to prepare, tasty with asparagus. I am fortunate to have a dad who takes long walks in the countryside with his partner to look for asparagus. Their seasonality goes from the end of March to early June. You can of course prepare this savory tart with larger asparagus like those found in the supermarket’s fruit section. No one forbids you, the only advice I can give you is to blanch them in a pot with plenty of water. This will make them softer and less woody, as they might not soften during the baking time of the tart.

Ingredients for a savory tart with asparagus

  • 1 sheet puff pastry
  • 3.5 oz wild asparagus
  • 3.5 oz smoked bacon (Conad)
  • 1 egg
  • 1 tbsp fresh liquid cream
  • 1 stracchino cheese (Nonno Nanni)
  • 1 pinch salt
  • 1 pinch black pepper

Preparation of the savory tart with asparagus and bacon recipe

  • The recipe for the savory tart with asparagus and smoked bacon really requires very little preparation time, so let’s start by preheating the oven to 350°F in static mode. Then bring some water to a boil with just a pinch of salt and immerse the asparagus for about ten minutes.

    Roll out the round puff pastry with its parchment paper in a not overly large baking dish, as you can see in my photo I left a border of about half an inch, so that the ingredients don’t spill out during cooking, and prick the base with a fork.

    In a tall-edged bowl, mix the egg with the tablespoon of cooking cream, the package of stracchino, a pinch of salt and pepper.

  • When it becomes a homogeneous mixture without lumps, add the smoked bacon. After the ten minutes of cooking the asparagus have passed, we can drain them. Take the mixture from the bowl and pour it onto the puff pastry base, use a spatula to level it well.

    Place the asparagus on top; I arranged them in a star shape and placed a smaller one in the central parts of each triangle, cutting off the stem. I sprinkled everything with a bit of black pepper and baked for about 35 minutes.

    As always, the cooking time depends on the oven, so check the puff pastry otherwise it might become dry or too hard. You can serve the savory tart with asparagus and smoked bacon either hot or cold. My friends devoured it. See you for the next recipe and bon appétit!!!
