SMART PUFF PASTRY, READY IN A FEW MINUTES

The recipe for smart puff pastry, ready in just a few minutes, useful for many sweet and savory preparations.

We are often in a hurry between house chores and work that absorbs most of our day, so we really have little time for cooking; but we are also extremely greedy, so we like to eat something tasty and delicious.

Here I come to the rescue with my super INFALLIBLE smart puff pastry recipe: mix the ingredients and make the folds: the magic begins, the pastry will become solid with each turn of the fold until it becomes a super solid dough ready to be used in the QUICK RUSTIC PIE, but also in the PUFF PASTRY CROISSANTS WITH PIZZAIOLA or PUFF PASTRY SWEETS WITH CHANTILLY CREAM and many other things.

Ingredients

  • 4/5 cup water
  • 1 1/8 cup butter
  • 2 3/4 cup all-purpose flour
  • 1 1/4 tsp salt

Steps

NOTE: for the recipe to succeed, the INGREDIENTS must all be COLD from the fridge, and let the water rest for 10 minutes in the freezer; this will help the recipe succeed.

  • In a mixer or stand mixer (for the bravest even by hand, in a bowl), pour the flour with the salt, work for a few seconds, and add the water slowly.

    Once done, add the butter in chunks and work for a maximum of one minute.

  • Then move to a work surface and knead for a couple of minutes, the dough should be rough, still with butter pieces. (see the video).

    At this point for the less experienced I recommend a rest in the fridge for thirty minutes; for the more daring, let’s go directly to the next step without rest.

  • Now the fun begins: roll into a square shape and bring the bottom edge to the middle and the top one, on top, as I show in the video: turn and roll again.

    Repeat the operations 4 times.

  • On the last fold cut the edges to form a precise rectangle, overlap making the last fold, and then refrigerate for an hour.

  • The SMART PUFF PASTRY, READY IN A FEW MINUTES is ready after its rest.

    Now you can do whatever you want.

Storage and Tips

The smart pastry can be easily stored in the refrigerator for several days, well sealed inside a bag or plastic wrap.

You can also freeze it to always have some on hand for last-minute invites, although they say it might be a bit less crispy. Personally, I do it and haven’t noticed much difference, you decide for yourself.
