SOFT, MOIST, AND EASY-TO-MAKE PLUM CAKE

The plum cake is a dessert as soft as it is moist inside, without butter in the batter, perfect for the whole family’s breakfast.

This is definitely one of my favorite cakes along with APPLE cake because it’s moist and soft, paired with a nice cup of tea it’s ideal for warming the heart; plums are also a great food for our body’s health.

Ingredients

  • 4 eggs
  • 5 tbsp oz sunflower oil
  • 0.5 cup oz milk
  • 0.75 cup oz sugar
  • 2.5 cups oz all-purpose flour
  • 1 packet baking powder
  • lemon zest (or vanilla extract)
  • 10 yellow plums

Tools

For this recipe, use a 9.5-inch cake pan.

  • In the stand mixer’s bowl, pour the eggs together with the sugar, attach the K-beater and start mixing for five minutes.

    The mixture will become lighter and frothy, incorporating air so the cake will be softer.

  • At this point, add all the ingredients: on a cutting board, chop 5 plums and set aside the others; pour into the bowl along with milk, oil, lemon zest, and let it mix.

  • Now sift in the flour and baking powder.

    It will be a soft but not too hard mixture.

  • Preheat the oven to 350 degrees if static, 340 if fan-assisted.

    Take the remaining plums, peel them removing the pit and slice them; pour the batter into the pan with parchment paper, level well with a spatula, and place the plum slices on top as decoration.

    We assemble the cake
  • Bake the cake for about forty minutes, always doing the toothpick test: insert a skewer, if it comes out clean the cake is ready.

    Let it cool well before removing from the pan, otherwise it will break.

Storage

Store in a cake container and consume within a few days as the fruit inside makes it moist and it will tend to mold quickly.
