LOW-TEMPERATURE COOKED TUNA
Today I present you with a truly amazing recipe, incredibly tasty and especially easy. Before presenting the recipe, however, I want to explain what I am about to show you.
The company Kitchenbossglobal sent me the fabulous Sous Vide G320 capable of cooking food at low temperatures.
What does it mean? Each food must be placed in a vacuum-sealed bag, and this bag retains all the properties of our dish without affecting the taste because it keeps all the liquids inside.
This cooking method is revolutionary because it maintains a constant temperature between 86°F and 104°F, which can be easily chosen from your appliance.
I decided to try cooking tuna, and I must say it was amazing. Of course, you should freeze each food first (have your trusted fishmonger do it), or, sear it immediately for thirty seconds in the pan, as I did, so as not to affect the strong taste of our dish.
Let’s see how I made the recipe for LOW-TEMPERATURE COOKED TUNA and how I used the sous vide in as detailed a way as possible.

- 1 loin natural tuna
- 1.5 tbsp butter
- 4 sprigs lemon thyme

Preparation
Fish preparation: first, we must place the fish in bags with the seasonings and create the vacuum seal. You can easily ask in supermarkets, as they are all equipped with vacuum machines if you don’t have one at home like me.

Now let’s move on to slow low-temperature cooking: in a large pot or basin, attach the sous vide. It comes with a clamp to be immersed in water up to the indicator itself and fill without exceeding the mark.
Now we plug it in, and our tool will turn on. It has a technological display that helps us choose the dishes, really very useful. I set it on tuna, but there is also meat, eggs, and much more.
Once you press start, the sous vide will begin to heat the water until it reaches the temperature shown on the screen (109°F). Once it reaches the temperature, the countdown will start in reverse, and the low-temperature cooking will begin, always constant.
Our tuna is ready. If you want to reach more degrees, increase time and temperature.
At this point, sear it slightly in a pan to give it a crispy note, or add sesame seeds, quinoa, or whatever you like best; 4/5 minutes per side.
The tuna is ready. You can enjoy a dish with all its aromas.
