SUPER SIMPLE HEART-SHAPED STUFFED PASTA
A pasta made with water and semolina, really easy to make, stuffed with potatoes and scallions, ideal for celebrating Valentine’s Day evening.
It is the week leading up to Valentine’s Day and we are here to give you different ideas for a perfect home dinner, easy and especially quick for those who don’t have time to spend at the stove.
This recipe might seem complicated, but trust me, it’s not: it’s made with just semolina and warm water, it mixes easily, roll it out with a rolling pin and voilà! Ready 😉
The filling then is really simple: peeled and boiled potatoes to which I added salt and scallions. Of course, you can make the filling in many ways: I kept it super light 🙂

Ingredients
- 3.5 oz remilled durum wheat semolina
- 3.5 tbsp water
- 2 potatoes
- 1 scallion
- 5 fine salt
- 1 diced speck

Steps
Let’s start with the filling that needs time to cook: peel the potatoes, chop coarsely, and boil in a pot with high sides full of water.
Adjust with salt and let it cook.
Meanwhile, prepare the dough: I made the ancient pasta with only water and semolina.
On a worktop, pour the flour in a well and gradually add the water, mixing until you form a smooth dough ball.
If you need more or less water, you’ll notice as you knead.
Now roll out the dough with a rolling pin or with a pasta machine.
Once the potatoes are cooked, mash with a fork, add the finely chopped scallion, and adjust with salt.
With a teaspoon, place some filling on the pastry sheet.
Close and cut the dough with the mold.
The pasta is ready
I then made a cream with the remaining filling, a ladle of cooking water, and crispy speck on top.
Cook the pasta in plenty of salted water and when they are ready (they float to the surface)
toss with a nice sprinkle of parmesan or pecorino cheese to taste.
