Ingredients for the Stuffed Filled Sandwiches

  • 4 cups all-purpose flour
  • 1 1/4 cups water
  • 1 tsp active dry yeast
  • 2 tsp sugar
  • 2 1/2 tsp salt
  • 1 1/2 tbsp extra virgin olive oil
  • 7 oz pork frankfurters
  • 2/3 cup ketchup
  • 1 tbsp extra virgin olive oil
  • 3.5 oz cooked ham
  • 3.5 oz provola cheese

How to Make Stuffed Filled Sandwiches

  • To prepare the stuffed filled sandwiches, you will first need to focus on preparing the dough.

  • In a bowl, place the sifted flour, add yeast and sugar and mix quickly. Then add the oil and some of the water. Start kneading, then add the salt and the remaining water. Work the dough until you get a smooth and homogeneous dough ball. If you want, you can move to the work surface and continue kneading, giving some reinforcing folds. Put the dough back in the oiled bowl, cover, and let it rise until doubled.

  • The rising times vary based on many factors. If you use the indicated yeast and your home’s temperature is around 68°F, it might take up to 4 hours.

  • Meanwhile, you can prepare the filling for your sandwiches. In my version, there are ham and provolone and frankfurters and ketchup. Cut the frankfurters into cubes and sauté them in a pan with 1 tablespoon of oil.

  • Take the risen dough, weigh it, and divide it into 10 parts. You should get pieces of about 80 g each. Roll out each portion on the work surface, using a very small amount of flour, and fill it with the stuffing: I made 5 with frankfurters and ketchup and 5 with ham and provolone. Then close them like a pouch and put the seam on the bottom. Continue this way until all the ingredients are used.

  • Place the sandwiches on a baking tray covered with parchment paper and let them rise for another 60 minutes.

  • Bake the stuffed sandwiches in a preheated static oven at 356°F for 20 minutes, in the center part of the oven. Check and adjust the cooking according to your oven. Take out and serve. Enjoy your meal!

Storage

The soft filled sandwiches are delicious when freshly made, but you can store them at room temperature for 2-3 days. I do not recommend freezing them.

  • Can I use fresh brewer’s yeast?

    Yes, if you want to follow the exact doses for this recipe you will need to use 9 g of fresh brewer’s yeast. If you have more time, you can decrease the dose. If you want to be faster, increase the dose.

  • Does the dough have to be made by hand?

    No, if you want to make the work easier you can use a stand mixer or any other machine capable of kneading (Thermomix or similar).

  • If I don’t like frankfurters or cooked ham, what can I use?
