Pumpkin and porcini a simple and tasty side dish, you can use either fresh porcini mushrooms or even frozen porcini if it’s not the season to find them at the greengrocer’s or if you go to the woods to pick them yourself. Ingredients

  • 2 cups pumpkin
  • 1.1 lbs porcini mushrooms
  • 1 potato
  • 1 clove garlic
  • to taste parsley
  • 3.5 oz pumpkin
  • to taste extra virgin olive oil
  • to taste salt

How to prepare pumpkin and porcini

  • Let’s start preparing pumpkin and porcini, clean the pumpkin, remove the skin and seeds, then cut it into small pieces.

  • Pour extra virgin olive oil and chopped onion into a pot, also add the pumpkin pieces and half a glass of water, cook for 10 minutes, stirring occasionally.

  • Peel the potato, slice it and place it in a pot with water, put it on the heat and once the water starts boiling, cook it for 15 minutes, then drain it and add it to the pan with the pumpkin. Add a pinch of salt and cook for 15 minutes, stirring occasionally, until done.

  • Clean the porcini mushrooms, use a small knife to remove the base of the stem and scrape off any dirt. If you’re lucky enough to have clean mushrooms, you only need to wipe them with a cotton cloth, possibly dampened to remove any earthy residues. If the porcini is very dirty, pass it under running water and dry it with paper towels. Mushrooms should never be submerged in water because they absorb it very quickly like sponges.

  • Then slice the mushrooms, pour some extra virgin olive oil and garlic clove into a pan, put it on the heat to warm up, then add the sliced porcini mushrooms, and cook for 7-8 minutes, stirring often.

  • Combine them with the pumpkin, adjust the salt, and serve with a sprinkle of parsley.
