Savory pie with poppy greens easy to make, delicious and great whether eaten hot or at room temperature, I prepared it with puff pastry as an alternative you can use pie crust. The Poppy Greens, rosolete, rosoine, paparine, each area of Italy calls them differently, but they are poppy plants and are delicious herbs, the best time to harvest these plants is from late February to March/April. I recommend also reading POPPY GREENS, rosolete or rosoine, what they are, recipes and how to recognize them. Now let’s see how to make the savory pie with poppy greens and if you try it let me know. How to prepare Savory Pie with Poppy Greens
Let’s start preparing the Savory Pie with Poppy Greens, clean the poppy greens by removing the roots, and carefully clean the lower part, eliminating any traces of soil.
Check each leaf, removing any spoiled ones, and once cleaned, wash them with plenty of running water and dry them.Place them in a large pot and add water, put on the heat and cook for 15 minutes, then drain, let them cool slightly, and then squeeze to remove excess water.
Place the diced bacon in a large pan, put it on the heat and let it brown, then add the poppy greens, add some salt and extra virgin oil, and let it season for about ten minutes, stirring so that everything absorbs the flavor.
Pour the eggs into a bowl and beat with a fork, then add a pinch of salt and the ricotta, mixing well to obtain a homogeneous and creamy mixture.
Unroll the puff pastry, place it in the pan, pour the poppy greens with the bacon, and distribute them well over the entire pan, pour the egg and ricotta mixture, and level.
Fold the edges of the puff pastry inward to create a crust, bake in a preheated static oven at 356°F (180°C) for 30 minutes, the cooking time may vary depending on the type of oven.
Once cooked, remove the savory pie with poppy greens from the oven and serve it hot or let it cool to room temperature.
