Strudel with Broccoli Rabe and Sausage: an Explosion of Rustic Flavors in a Flaky Shell

The strudel with broccoli rabe and sausage is a delightful dish that combines the simplicity of tradition with creativity in the kitchen.

The classic strudel, known to all in its sweet version, and Italian rustic cuisine, where broccoli rabe and sausage are the undisputed stars, come together to create a rustic dish full of taste and character.

Here is a savory strudel that surprises with the first bite. The crispness of the puff pastry shell, which crumbles slightly under the teeth, gives way to a creamy and enveloping filling. The broccoli rabe, sautéed in a pan with oil, garlic, and a pinch of chili pepper, releases all its zest, perfectly balanced by the sweetness of the sausage.

This strudel is the perfect solution for a rustic yet original dinner, a scenic appetizer to impress guests, or a tempting idea for a buffet. You can serve it hot, just baked, to enjoy the contrast between the crispy pastry and the juicy filling, or at room temperature, sliced for a convivial aperitif.

If you love rustic preparations with a touch of originality, this recipe will win you over at the first taste!

Ingredients for Strudel with Broccoli Rabe and Sausage

  • 1 roll puff pastry
  • 1 lb broccoli rabe
  • 1 oz sausage
  • 1 clove garlic
  • 1 dried red chili pepper
  • 3 pinches salt
  • 4 tbsps extra virgin olive oil

Preparation of Savory Strudel with Broccoli Rabe and Sausage

  • First, clean the broccoli rabe by removing the tougher stems and damaged leaves. Wash them well under running water.

Blanch the vegetables in salted boiling water for 5 minutes. Drain and let them sit in a colander to remove excess liquids.

In a pan, heat three tablespoons of evo oil and add the slightly crushed garlic clove and the chili pepper. After a couple of minutes, add the broccoli rabe, which you have chopped a little.

Salt and cook over moderate heat for a few minutes.

Remove from heat, discard the garlic and chili pepper, and let it cool.

  • Roll out the puff pastry rectangle on the work surface and prick the surface with a fork.

Distribute the broccoli rabe in the center of the dough and add the sweet sausage, cut into pieces.

Roll the base on itself, sealing the edges well, and make spaced small cuts on the surface of the strudel.

Transfer the roll to a baking sheet covered with parchment paper and brush it with a little oil. Bake in the oven at 392°F for 25-30 minutes.

  • You can serve strudel with broccoli rabe and sausage either hot or warm.

Storage

The savory strudel with broccoli rabe can be stored in the fridge for 2-3 days in an airtight container. Before enjoying, reheat it in the oven at 320°F for about ten minutes.
