HOMEMADE MASHED POTATOES

Homemade mashed potatoes are perfect for accompanying any dish, creamy and easy to make. I know many people make it with a box of potato flakes you buy at the supermarket, but I assure you it’s not worth it, with fresh potatoes it takes very little time and you get perfect mashed potatoes. To avoid getting lumpy mashed potatoes, or too liquidy or sticky, I’ll reveal a few tricks, use white potatoes, rich in starch; if you use yellow-fleshed ones you’ll have sticky mashed potatoes, basically, you need to use floury potatoes. I steam cook the potatoes already peeled and chopped so they don’t absorb additional water. If you boil them, cook them whole and with the peel, cook them with unsalted cold water and make sure not to immerse them in boiling water, they’ll be done when a fork goes into the potatoes, it will take about 40 minutes. You can also cook the potatoes in a pressure cooker reducing the cooking time by half, either steaming or traditionally. Then make sure to mash them while still hot using the classic potato masher, alternatively use the food mill but never the hand blender because then the mash will be sticky because they will lose the starch. How to make Homemade Mashed Potatoes

  • We start preparing the homemade mashed potatoes, first cook the potatoes without salt, choosing the cooking method you prefer, either boiling or steaming, in a traditional pot or pressure cooker.

  • When the potatoes are cooked, immediately mash them in the pot where you previously cooked the potatoes so it’s still hot, season with salt, and mix the potatoes for a few minutes.

  • Heat the milk in a small pot or microwave. Add the cold butter from the fridge to the hot potatoes and mix until it melts and gradually add the warm milk while continuing to stir until you achieve the desired consistency; we like it thick.

  • When the homemade mashed potatoes are ready, remove from heat, adjust salt, and serve immediately.
