Ingredients for preparing the Beef Roast

  • 1.8 lbs beef meat
  • 1 clove garlic
  • 2 sprigs rosemary
  • 4 leaves sage
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • 1/2 cup white wine
  • to taste broth (or water)

How to prepare the Beef Roast

  • Let’s start preparing the Beef Roast, take the piece of meat and massage it with some oil, place it in a bowl, add the sage, rosemary, the cleaned and halved garlic clove, and add the white wine. Cover the bowl with plastic wrap and keep it in the refrigerator overnight.

  • The next morning, pour some extra virgin olive oil into a pot, put it on the heat, and when it’s hot, place the piece of meat inside, brown it well on each side to seal the meat properly, avoid piercing it with a fork while turning, so the juices remain inside and the meat stays tender.

  • When it is browned, pour the marinating wine and the herbs, season with salt and cook, adding broth if necessary, cook for 50 minutes, turning the roast occasionally to ensure even cooking.

  • When the beef roast is cooked, turn off the heat and let it rest for 5 minutes before removing and slicing.

  • You can serve the slices of roast beef with the cooking sauce, you can thicken the sauce by adding a teaspoon of cornstarch and putting it on the heat to thicken.
