- 10.5 oz squid
- 1 lemon
- 1 orange

How to prepare the squid and shrimp salad
Let’s start preparing the squid and shrimp salad, clean the squid from the innards and remove the cartilage found on the back of the squid by simply pulling it out. Use a knife to remove the beak and eyes. Rinse the squid under running water, detach the tentacles and cut the squid body into rings.
Squeeze the juice of a lemon
and the juice of an orange,
then pour the orange juice into a small bowl,
the lemon juice,
some oil
and beat with a fork to emulsify well.
Bring water to a boil and then add the squid, cooking for 7-10 minutes, the time varies depending on the size of the squid,
once cooked, drain and transfer them to a bowl.
Clean the shrimp as well, remove the shell, cut along the back and use a toothpick to remove the black vein. Rinse them under running water, then place them in boiling water and cook for 2-4 minutes.
Once the shrimp are cooked, drain and add them to the bowl with the squid,
and season with chopped parsley,
the dressing of oil, lemon, and orange,
season with salt
and pepper and mix everything well.
Serve the salad hot or at room temperature.
