Ingredients

  • 320 g oat pasta
  • 1 bell pepper
  • 1 eggplant
  • 1 zucchini
  • as needed extra virgin olive oil
  • as needed roast herbs
  • 1 pinch salt
  • 10 cherry tomatoes

Steps

  • Let’s start by preparing the vegetables. Peel an eggplant, cut it into strips, then into small cubes. Wash a bell pepper, remove the cap, seeds, and internal filaments, then cut it into pieces. Finally, dice a zucchini after removing the ends.

  • Combine all the vegetables in a large bowl, add extra virgin olive oil, a pinch of salt and a mix of roast herbs. Mix well with a spoon or your hands to evenly distribute the seasoning.

    Transfer the vegetables to the basket of the air fryer, arranging them in an even layer. Start cooking at 356°F for about 30 minutes. After the first 20 minutes, add the quartered cherry tomatoes directly into the basket, shake slightly to combine everything, and complete the cooking.

  • Meanwhile, bring a large pot of salted water to a boil and cook the oat pasta according to the instructions on the package. Once ready, drain it and transfer it to a large bowl.

    Add the crispy vegetables just out of the fryer to the pasta, mixing gently to avoid breaking the cubes. If the pasta seems dry, we can add a splash of the reserved cooking water.

    Serve it by decorating the dish with a few fresh mint or basil leaves.

Storage and Tips…

The air fryer oat pasta with vegetables should be enjoyed immediately, right after cooking!

However, you can store it in the fridge and eat it the next day, cold or slightly warm.
