- 1.1 lbs mushrooms (mixed)
- 1.1 lbs squash
- 1.8 oz onion
- to taste extra virgin olive oil

How to prepare Squash and Mushrooms in the Pan
Let’s start preparing the squash and mushrooms in the pan, clean the squash, remove the peel and internal seeds, then cut it into small pieces.
Clean the mushrooms and if they are too large, cut them into pieces, otherwise leave them whole. Also clean the onion and chop it, clean the parsley and chop it finely.
Pour extra virgin olive oil and the chopped onion into a pot, also add the squash pieces and half a cup of water, cook for 10 minutes, stirring occasionally.
Then add the mushrooms, a pinch of salt, and cook for 15 minutes, stir occasionally and finish cooking.
When the squash and mushrooms are cooked, adjust the salt and sprinkle with the chopped parsley, serve piping hot.
