How to prepare Pasta with shiitake mushrooms
Let’s start preparing pasta with shiitake mushrooms. Clean the mushrooms, removing almost all of the stem, which in this variety is very hard and woody. Rinse them quickly under running water and cut them into pieces. Pour water into a pot for the pasta, add salt, and bring it to a boil.
Pour some extra virgin olive oil into a pan, add the garlic clove, and let it flavor for a few minutes. Then add the shiitake mushrooms, chopped parsley, and cover with a lid to prevent the mushrooms from drying out during cooking. Stir occasionally and cook for 15 minutes.
When the water is boiling, add the pasta (in my case, spaghetti). Cook until very al dente, then drain and transfer them to the pan with the mushrooms. Add a little cooking water and toss to finish cooking the pasta. Add chopped parsley and grated cheese.
