SAUTÉED BLACK CABBAGE

Sautéed Black Cabbage without boiling it first is a tasty side dish, and you can use it to season pasta or serve it with slices of rustic bread. I like the sautéed black cabbage coarse, leaving the leaves whole. You can cut them into pieces if you prefer them smaller, after cleaning and removing the central stem. Want to know how to clean black cabbage? It’s very easy; the central stem is harder and needs to be removed. Take the larger leaves, make incisions in the lower part next to the stem, and sliding your hand along the stem, remove it, leaving only the tender part. Now let’s see how to make sautéed black cabbage and if you try it, let me know. Barbara

Ingredients for Sautéed Black Cabbage

  • 14 oz black cabbage
  • 1 clove garlic
  • to taste extra virgin olive oil
  • to taste salt

How to Prepare Sautéed Black Cabbage

  • Let’s start by preparing the Sautéed Black Cabbage without boiling it first. Clean the black cabbage, and for the larger leaves, you need to remove the central stem, as it is tough and fibrous. For the smaller ones, it is very tender and doesn’t require removal. To remove the stem, make two incisions near the base of the stem, make incisions in the lower part next to the stem, and sliding your hand along the stem, remove it, leaving only the tender part.

  • Wash the black cabbage under running water, then place it in a pan and add extra virgin olive oil. Finely chop the garlic clove or crush it with a garlic press and add it to the pan. Also, add half a cup of water (about 3.5 oz), cover with a lid, and cook for 15 minutes, stirring occasionally. Remove the lid, adjust the salt, and let any remaining water in the pan evaporate.

  • The sautéed black cabbage is ready. Remove from heat, adjust the salt, and serve hot.
