How to prepare sautéed shiitake mushrooms
Let’s start preparing the sautéed shiitake mushrooms. Clean the mushrooms, removing most of the stem, which in this variety is very hard and woody. Quickly wash them under running water and cut them into pieces.
Pour extra virgin olive oil into a pan, add the garlic clove, and let it simmer for a few minutes. Then add the shiitake mushrooms and chopped parsley, cover with a lid to prevent the mushrooms from drying during cooking. Stir occasionally and cook for 15 minutes.
Once cooked, salt the mushrooms and serve them hot.
