Ingredients for preparing Mushroom Velvet Soup

  • 1.1 lbs porcini mushrooms
  • 1 clove garlic
  • to taste extra virgin olive oil
  • to taste parsley
  • 4.2 cups vegetable broth
  • 3 tablespoons cornstarch
  • 3.5 oz bacon

How to Prepare Mushroom Velvet Soup

  • Let’s start preparing the Mushroom Velvet Soup, clean the mushrooms, remove the bottom part of the stem, scrape it to remove the dirt, and cut them into pieces.

  • Then pour the mushrooms into a pot, add the clove of garlic, some chopped parsley, a pinch of salt, and put it on the stove, cook for 15 minutes, stirring occasionally.

  • Prepare the vegetable broth, when the mushrooms are ready, remove the garlic, adjust the salt, and set aside 1/3 of the mushrooms on a plate, you will add them to the cream later to also have mushroom pieces. Cut the bacon into julienne or cubes, heat a pan, and when it is very hot, add the bacon and fry it well to make it crispy.

  • Pour the cornstarch and some vegetable broth into a glass, stir to dissolve the cornstarch, then pour it into the pot with the mushrooms and also add the remaining broth. Blend with an immersion blender to obtain a cream and then add the porcini mushroom pieces set aside earlier.

  • Pour the hot mushroom velvet soup into the plates, add the previously cooked bacon, and also add slices of toasted bread or croutons.
