Then this version of my pizza sticks will elevate your dinner (or savory snack)! Super crispy on the outside, soft inside, with the mozzarella added only in the last minutes of baking to avoid burning and achieve that “pizza by the slice” effect everyone loves.
A brilliant idea to save and recreate when you have a bit of flour left and just want something good and quick.

- 4 cups flour
- 1.35 cups water
- 2 tsp fine salt
- 1.5 tbsps extra virgin olive oil
- to taste extra virgin olive oil

- to taste oregano
- 10.5 oz mozzarella

Steps – How to Make Pizza Sticks with Mozzarella
Grab a bowl or stand mixer, turn on the oven, and start: this is a quick recipe, but the result is amazing.
Pour the flour into a bowl or stand mixer with the salt.
Add water little by little and start mixing.
Combine the oil and knead by hand until you get a smooth and homogeneous dough.
Divide into 8 or 9 parts and roll them out with a rolling pin or pasta machine for a perfect result. The thinner = the crispier.Heat the static oven to 482°F (already hot).
Add oil, tomato sauce, salt, and oregano to each stick.
Bake the pizza sticks without mozzarella for about 15/17 minutes (until they start to brown at the edges).Remove the sticks from the oven, add the well-dried mozzarella (cut into cubes or strips).
Put back in the oven for another 3 minutes, just enough time to melt it without burning.
Remove from oven, sprinkle with oregano or basil, cut, and serve immediately!
Tips and Variations
• Use smoked provola or scamorza instead of mozzarella for a stronger flavor.
• You can also add black olives or anchovies at the last moment.
• For a “white pizza” version, omit the tomato and use only cheese and herbs.
Storage
The pizza sticks with mozzarella are delicious when freshly made, but you can store them:
• in the fridge for 1 day wrapped in plastic wrap and reheat in the oven or skillet;
• in the freezer (without mozzarella), then finish with cheese at the moment.
