Fried sweet tortelli with chocolate are one of my favorite Carnival desserts. Not just because I am an incurable sweet tooth, but because they are tied to sweet memories and that unique joy that only traditional desserts can provide.
Crunchy outside, with a soft and enveloping heart of cocoa and hazelnut cream, they are a real temptation, and who could resist?
The magic of this recipe lies in its simplicity: flour, eggs, sugar, butter, milk, a bit of rum, and you get an elastic and light dough, ready to welcome a delicious chocolate filling. After frying, each tortello is dusted with a mix of sugar and cinnamon, adding that extra touch of fragrance and flavor.
Chocolate sweet tortelli are the undisputed stars of Carnival but are enjoyed with pleasure on any occasion. Served hot, with the chocolate gently melting inside, they offer a unique and satisfying tasting experience.
To get light and crispy tortelli, the oil must be very hot, but without exceeding the smoke point. Fry them a few at a time and drain them on absorbent paper to remove excess oil. The result? A golden, fragrant, and irresistible delight.
If you have never tried them, now is the right time: prepare the dough, heat the oil, and let yourself be enveloped by their intoxicating aroma. They will be the perfect dessert to make every moment special!

Ingredients for Fried Sweet Tortelli with Chocolate
- 2 1/2 cups flour
- 2 eggs
- 1/4 cup sugar
- 3 1/2 tbsp butter
- 1/3 cup milk
- 1 1/2 tbsp rum
- 1 1/2 tsp baking powder
- 1 pinch salt
- 1 lemon
- as needed vegetable oil
- as needed cocoa spread
- 1/4 cup sugar
- 1 tbsp ground cinnamon
Preparation
In a bowl, pour the sifted flour and baking powder along with the pinch of salt.
Make a well in the center and add the sugar, eggs, softened butter in pieces, milk, rum, and the grated zest of one lemon.
First, mix the central ingredients, crushing the butter; then incorporate the flour.
Transfer the dough to a floured board and knead it with your hands until you have a smooth and homogeneous dough ball.
Wrap it with plastic wrap and place it in the fridge for 30 minutes.
After the resting time, take the dough from the fridge and roll it out with a lightly floured rolling pin. You need a sheet 1/8 inch thick.
Then, cut out rounds with a cookie cutter or a glass (2 1/2 – 3 inches) and fill half of them with a teaspoon of cocoa spread.
Moisten the edges of the tortelli with a bit of water and cover them with the remaining discs. Seal them well, pressing with your fingers and finishing with the tines of a fork.
Heat the vegetable oil well and immerse the tortelli, a few at a time. Turn them often and drain them as soon as they are puffed up and golden.
Finally, pass the fried tortelli in the sugar and cinnamon mix.
