  • 3.5 oz mozzarella for pizza (or scamorza)

How to prepare bruschetta with eggplant

  • Let’s start by preparing the bruschetta with eggplant. First, cook the eggplant: wash it, remove the stem part, and then cut it into small pieces. Finely chop one clove of garlic; the second will be used to flavor the bread, cut it in half and set it aside. Pour some extra virgin olive oil into a pan, the chopped garlic clove, and the freshly diced eggplants. Season with salt, add chopped parsley, stir, and cook for 15 minutes, stirring occasionally so that all the eggplants cook evenly. 

  • Slice the bread and toast it in the toaster, then rub garlic on the slices to flavor them. Cut the mozzarella or another cheese you prefer into pieces. When the eggplant is ready, pour it over the bread slices and add the cheese cubes.

  • Now put the bruschetta in the preheated oven at 356°F for a few minutes, just enough time for the cheese to melt, or place them in the air fryer at 356°F for 3 minutes.

  • Serve the bruschetta with eggplant as soon as they are ready or at room temperature as you prefer.
