Today for lunch I prepared Fregula with artichokes and sausage, delicious. Fregula is one of the most loved traditional dishes from Sardinia. There are many recipes on the Blog as well, such as Fregula with clams, Sardinian Fregula with prawns, and Sardinian Fregula with wild asparagus, an easy recipe. In short, if you are a fan of Sardinian Fregula like me, you must try them all. There are many ways to cook fregula; personally, I like it a bit soupy, but you can make it drier if you prefer.

Ingredients
- 3 artichokes
- 1/2 onion
- 2 cloves garlic
- 10.5 oz fresh sausage
- 4 cups vegetable broth
- 9 oz Sardinian fregula
- 1 bunch parsley

Steps
Clean the artichokes well, slice them and sauté for 5 minutes with the oil, chopped onion, garlic, and parsley.
Add the crumbled sausage and cook for another 10 minutes.
Add the fregula and let it season for 5 minutes.
Continue cooking, occasionally stirring, and adding ladles of hot broth until the fregula is fully cooked.
