Ingredients for making gnocchi with meat sauce
- 1.1 lbs boiled potatoes
- 1 1/4 cups flour
- 1 pinch salt
- to taste nutmeg (optional)
- 14 oz ground beef
- 1 1/4 cups tomato sauce
- 1 tbsp triple tomato paste
- 1 stalk celery
- 1 carrot
- Half onion
- 3 tbsps extra virgin olive oil

How to make gnocchi with meat sauce
Let’s start preparing the meat sauce that will be used to dress the gnocchi. Clean the vegetables, wash them, and cut them into small pieces to prepare a sauté. Then pour the vegetables into a pot, add some extra virgin olive oil. Sauté for a few minutes, then add the ground beef, mix well, and cook for 10 minutes, stirring occasionally.
Then add the triple tomato paste and the tomato sauce, a few ladles of water, a pinch of salt, some basil leaves, and mix well. Cook over low heat for 2 hours, adding water little by little as needed.
Boil the potatoes with the skin on, mash them with a potato masher, and place them in a bowl. Let them cool slightly but not completely. Then add salt and, if you like, nutmeg. Add the flour and mix first with a fork and then knead with your hands until you get a homogeneous dough.
Place the dough on a previously floured work surface, take some of the dough, form rolls, cut them with a knife to form the gnocchi, and then pass them over the gnocchi board or the tines of a fork.
Bring water to a boil, salt it, and add the freshly prepared gnocchi, a few at a time. When they float to the surface, they are cooked. Collect them with a slotted spoon and place them in a pan. When all the gnocchi are cooked, dress them with the meat sauce and, if necessary, heat them well before serving.
