Ingredients for making meat broth
- 8 1/2 cups water
- 1 1/3 lbs beef
- 1 beef bone
- 2 carrots
- 1 potato
- 3 stalks celery
- to taste salt
- 1 onion
- to taste parsley
How to prepare meat broth
Let’s start making homemade meat broth, clean the carrots, remove the outer part with a vegetable peeler, and remove the ends. Clean the onion and cut it in half, also clean the celery stalks, removing the leaves and any tougher strings, peel the potato and cut it in half if it’s large, also clean some parsley sprigs and wash all the vegetables well.
Place the vegetables in a pot, add the beef and the bone, cover with 2 liters of water, put on the heat and bring to a boil. When the water starts boiling, lower the heat and let it simmer for about 2 hours. During cooking, if necessary, remove with a skimmer the fat that may have formed on the surface. At the end of cooking, remove from the heat, adjust the salt, and strain the broth to remove the vegetables and meat.
After cleaning the vegetables as described earlier, place them in the pressure cooker, add the meat and bone, pour the water, and close the lid, put on high heat. Once you hear the whistle, lower the heat and cook for 60 minutes.
After the cooking time, turn off the heat, let the steam escape, and when the safety valve lowers, open the pot and adjust for salt, strain the broth, removing the vegetables and meat, and use the pressure cooker meat broth as you prefer.
How to store meat broth
You can store the meat broth in the refrigerator for 3/4 days in an airtight container and you can also freeze it. I freeze it in half-liter plastic bottles, and when I need it, I defrost it at room temperature or in the fridge if I have more time. Alternatively, you can freeze it in ice cube bags or small containers.
