Ingredients for the Savory Appetizer Cookies
- 1.5 cups all-purpose flour
- 1.75 oz grated cheese (pecorino, parmesan, or other of your choice)
- 2 tbsps extra virgin olive oil
- 1 egg (XL size)
- 3 tbsps water
- 1 tsp instant baking powder for savory preparations

Preparation of Savory Appetizer Cookies
In a bowl, pour the flour, salt, baking powder, grated cheese, and pepper and mix quickly.
Add the egg, oil, and water to the bowl and start mixing with the spoon. Once the mixture becomes compact, transfer it to a floured work surface.
Knead on the work surface for a few minutes until you obtain a smooth and soft dough (similar in consistency to shortcrust pastry).
With the rolling pin, roll out the dough to a thickness of 1/5 inch, use the plunger cutter with a diameter of 1 inch to cut out the cookies, knead the scraps, roll out and cut again, continue this way until all the dough is used up.
Place the cookies on a baking tray lined with parchment paper (if necessary, bake in two separate batches), preheat the oven to 430°F.
Once the oven has reached temperature, bake the savory appetizer cookies, cook for 12 minutes, then remove them from the oven and let them cool.
