Ingredients to prepare Lemon Fritters

  • 8.8 oz mascarpone
  • 2.8 oz sugar
  • 1 lemon (untreated)
  • 3 eggs
  • 7 oz all-purpose flour
  • 1 packet baking powder
  • as needed peanut oil
  • as needed powdered sugar

How to prepare Lemon Fritters

  • Let’s start preparing the Lemon Fritters, pour the sugar and mascarpone into a bowl and mix well with a fork to obtain a cream.

  • Add the flour, eggs, baking powder, and the zest of one untreated lemon, mix well with a fork until you get a homogeneous and creamy dough.

  • Pour the peanut oil into a pot or fryer and bring the oil to a temperature of about 340/356 °F. If you don’t have a thermometer, check when the temperature is right for frying with the help of a wooden stick, immerse it in the oil and if bubbles form around it, the oil is ready to be used.

  • With a teaspoon, take the dough and pour it into the hot oil, letting it detach with the help of another teaspoon. Continue this way until all the dough for the fritters is finished. For uniform cooking, after pouring the dough into the hot oil, rotate the fritters with a fork to achieve even and uniform cooking.

  • As the fritters are ready and golden, drain them with a slotted spoon and place them on a plate with absorbent paper. When you have cooked them all, if necessary, change the paper and sprinkle them with powdered sugar.

How to store lemon fritters

Lemon fritters can be stored at room temperature for 2 days, although I recommend consuming them the same day to keep them soft and fragrant.
