How to prepare cotechino in a pressure cooker
Let’s start preparing the Cotechino in pressure cooker, take a sheet of aluminum foil and place the cotechino in the center,
wrap it well like a candy, close again with a second sheet of aluminum foil.
Pour the water into the pressure cooker, place the steamer basket and lay the cotechino inside. Close with the lid and put on high heat. When you hear the whistle, lower the heat to the minimum and let it cook for 80 minutes, the time may vary slightly depending on the weight of the cotechino.
Once cooking is finished, turn off the heat, let the steam escape, and when the safety valve lowers, open the pot, remove the cotechino from the steamer basket, open the aluminum foil, you will see that it is cooked and less greasy.
Take the cotechino, make a lengthwise incision on the skin, and remove it, then cut the cotechino cooked in a pressure cooker into slices and serve it as you prefer.
