How to prepare the Baguette with broccoli rabe and breaded chicken fillets
Let’s begin preparing the Baguette with broccoli rabe and breaded chicken fillets. Clean the broccoli rabe, take the leaves, wash them under running water, and cook them in boiling water for 5 minutes, then drain. Pour some extra virgin olive oil into a pan, add a clove of garlic and some chili pepper, let it flavor for a few minutes, then add the broccoli rabe and let it cook on low heat for 10 minutes to let it absorb the flavors.
Meanwhile, prepare the AIA chicken fillets, preheat the fan oven to 392°F and place the fillets in a baking dish without any seasoning. Once the oven is hot, bake and cook for 15 minutes, turning the fillets halfway through cooking.
Cut the bread in half, toast it in a pan or electric griddle for a few minutes on the crumb side. Fill with the broccoli rabe, add the stracciatella cheese, and add the AIA breaded chicken fillets cut into pieces, or if you prefer, you can leave the fillet whole, close the sandwich and serve it.
