Pumpkin Cordon Bleu are an easy second course to make, soft inside and crispy outside, with a filling of ham and cheese. They are a sort of pumpkin cutlets but with a tasty and simple filling that even children like. You can personalize and vary the filling, for example, you can use speck or bacon and for the cheese, use smoked scamorza or provolone. I baked the pumpkin cutlets in the oven, but you can also cook them in an air fryer or even fry them in a pan depending on what you prefer or find more convenient. If you are lactose intolerant, you can use lactose-free cheese to prepare these pumpkin sandwiches. If you have celiac disease or gluten intolerance, just use gluten-free bread to get a suitable breading and make gluten-free pumpkin cordon bleu. How to make pumpkin cordon bleu
Let’s start preparing the Pumpkin Cordon Bleu, slice the butternut squash, and
remove the peel around each slice.
Take two slices and place a slice of cheese in the center, I used pizza mozzarella,
also add some ham
and close with the second slice of pumpkin and press well. Continue this way to make the other pumpkin cordon bleu.
Then pass each cordon bleu first in the flour,
then in the beaten egg
and finally in the bread crumbs.
Place the cutlets on a baking sheet lined with parchment paper and add a pinch of salt,
some nutmeg
and extra virgin olive oil.
Bake in a preheated ventilated oven at 356°F (180°C) for 20 minutes, turning the cutlets halfway through for a more even and uniform cooking.
Cook the pumpkin cordon bleu in an air fryer at 392°F (200°C) for 15 minutes, halfway through, open the basket and turn the cordon bleu to achieve even cooking.
The cooking time may vary depending on the type of air fryer you use, this is the AIR FRYER I use. I recommend checking out all air fryer recipes, you’ll surely find other tasty dishes to try.
