The jam cake is a soft and simple dessert, prepared in just a few minutes and perfect for using up that open jar of jam sitting in the fridge! Ingredients for the Jam Cake
- 2 eggs (size XL)
- 1 3/4 cups all-purpose flour (or 1 3/4 cups of low glycemic index flour)
- 1/3 cup semi-skimmed milk (must be fridge cold)
- 1/2 cup raspberry jam (no added sugar for low glycemic index)
- 1/3 cup sugar (or 1/4 cup of stevia for low glycemic index)
- 2 tbsps extra virgin olive oil
- 1/2 packet baking powder
- to taste powdered sugar (or stevia or erythritol powder for low glycemic index)

Preparation of the Jam Cake
In a bowl, add the eggs, sugar, oil, and milk, and mix quickly with a spoon for 2 minutes.
In a separate bowl, sift and mix together the flour and baking powder.
Add the dry mixture to the bowl with the liquid mixture and mix with a spoon for a few minutes until smooth and lump-free (it takes very little time, it’s super easy!).
Oil and flour the baking pan, pour in the batter, and level it with a spatula. Spoon the jam on top.
Preheat the electric oven to 428°F.
Once the oven is hot, bake for 30 minutes (towards the end of baking, always do the toothpick test because ovens vary), once the cake is baked, take it out and let it cool outside the oven.
As the cake cools, it is normal for it to sink where the jam is placed, once cooled, remove it from the pan, dust with powdered sugar, and serve!
