Pasta with potatoes and tuna is a creamy first course perfect for any occasion. I cooked the potatoes in a pan to make them even more flavorful and fragrant; if you prefer, you can boil them for a milder and less intense taste. Pasta with tuna and potatoes is perfect if you have leftover potatoes from the day before; even roasted potatoes work well, and to achieve a creamy pasta, it’s necessary to blend some of the potatoes into a puree and then extend it with the pasta cooking water. To prepare the pasta with potato and tuna cream, I used fresh trofie, but you can also use spaghetti or penne. Now let’s see how to make pasta with potatoes and tuna, and if you try it, let me know. How to prepare pasta with potatoes and tuna
Let’s start preparing the pasta with potatoes and tuna. Peel the potatoes.
and cut them into small pieces.
Pour extra virgin olive oil in a pan,
a garlic clove skewered on a toothpick, so that it will be easy to remove later.
Add some sage leaves and rosemary sprigs,
pour in the potatoes,
a pinch of salt,
some water, and cook for 15 minutes, stirring occasionally. The cooking time may vary depending on the type of potatoes and the size of the pieces. The potatoes should be tender; you can check by inserting the prongs of a fork; if they go in easily, they are cooked; otherwise, cook the potatoes a bit longer.
When the potatoes are ready, remove the toothpick with the garlic, the rosemary sprigs, and the sage leaves.
Pour half of the potatoes into the immersion blender cup,
add hot water or possibly some pasta cooking water,
blend for a few seconds to obtain a cream.
Pour water into a pot, and when it’s hot, add salt,
add the pasta
and cook according to the time indicated on the package. When the pasta is ready, drain it and add it to the pan with the potato pieces,
add the potato cream
and gradually add water to make the potato cream sauce creamy.
Complete with the tuna drained from its oil
and sprinkle with plenty of parsley. Mix well until you get a beautifully creamy pasta.
Serve the pasta with potatoes and tuna hot
How to store pasta with potatoes and tuna
