- 3 egg yolks
- 5.3 oz powdered sugar
- 1.4 oz cornstarch
- 1 tsp vanilla extract
- 1 lemon
- 1 pinch salt
- 2.1 cups milk
How to make custard cream with cornstarch
Let’s start preparing the custard cream with cornstarch, separate the eggs, the egg whites can be used to make meringues.
Pour the yolks into a saucepan
and beat them with a hand whisk
then add the cornstarch and mix slightly,
also add the powdered sugar and incorporate it into the yolks.
Pour half of the milk and continue working with the whisk until you get a lump-free and homogeneous mixture,
only now add the remaining milk.
Add the grated lemon or orange peel as you prefer,
and a pinch of salt which will further enhance the flavor of the cream.
Place on the heat and keep stirring until it reaches a boil and thickens, let it cook on low heat for a few minutes.
Remove from heat and add a teaspoon of vanilla extract, alternatively you can add the seeds of a vanilla bean or a sachet of vanillin.
Transfer the cream to a plate
and cover with plastic wrap, making it adhere to the cream to prevent a skin from forming, let it cool and then place it in the refrigerator for 6/8 hours.
When the cream is cold and thick, remove it from the refrigerator, remove the plastic wrap
and use the custard cream with cornstarch as you prefer.
