Ingredients for Apple and Ricotta Squares

  • 1 3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 3 eggs
  • 1 cup ricotta
  • 1 tbsp lemon zest
  • 1 Golden apple
  • 3 tbsp sunflower oil
  • as needed sliced almonds
  • 1 tbsp lemon juice
  • Half packet baking powder

Recipe for Apple and Ricotta Squares

  • Start the preparation of the apple and ricotta squares by washing the Golden apple. Remove the core and cut it into pieces; I left the peel on, but you can remove it if you prefer.
    Transfer the apple pieces to a bowl, add a tablespoon of lemon juice, and set aside.

  • In another bowl, break the eggs.
    Add the sugar and ricotta, which should be drained for half an hour before preparation.
    Beat everything with an electric mixer until you get a smooth and frothy mixture.

  • Continue the preparation by adding the zest of half an untreated lemon.
    Slowly pour in the sunflower oil while stirring.

  • With the help of a sieve, add the flour and baking powder.
    Mix well until you get a homogeneous and fairly firm dough.

  • Finish the dough by adding the apples.
    Mix carefully to distribute them evenly throughout the dough.

  • Transfer everything to a 8-inch square pan and level the surface with a spatula.

  • Decorate the surface with sliced almonds as desired.
    A sprinkle of brown sugar is also optional.

  • Bake the apple cake in a preheated static oven at 350°F for 25-30 minutes.
    Do the toothpick test before removing from the oven.
    Let it cool completely, then cut the cake into squares.
