Ingredients for preparing the vegetable-stuffed potato boats
- 2 potatoes
- 1 carrot
- 1.8 oz peas
- 2 tbsp cream cheese
- to taste chives
- to taste extra virgin olive oil
- to taste salt
How to prepare vegetarian stuffed potatoes
Let’s start preparing the Vegetarian stuffed potatoes. Wash the potatoes very well and do not peel them. Pour water into a pot and place the potatoes. Put the pot on the stove and cook for 30/40 minutes; the time may vary depending on the size of the potatoes. If you prefer, you can use a pressure cooker to reduce the time. When done, place them on a plate and let them cool.
Peel the carrots, remove the ends, wash them well, and cut
them into small cubes.
Pour water into a pot and add some salt,
fresh or frozen peas,
and the carrot in small pieces. Cook for 10 minutes, then drain and cool completely.
Pour the cream cheese into a bowl, add chives or parsley,
add a pinch of salt and extra virgin olive oil,
and mix very well.
Now add the peas and carrot pieces to the cream cheese,
and mix well.
Cut off the top of the potatoes,
hollow out the inside of the potatoes with a melon baller or a teaspoon.
Fill the potatoes with the cream cheese and vegetable mixture,
add a drizzle of extra virgin olive oil.
Place in the refrigerator for at least half an hour before serving the vegetarian stuffed potatoes
