  • 18 oz netted melon or cantaloupe (weight without peel)
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 tsp vanilla extract

How to prepare Melon Jelly

  • Let’s start preparing the Melon Jelly, cut the melon in half, remove the seeds using a spoon, then slice it and remove the peel. Now weigh the pulp needed to make the jelly.

  • After weighing the pulp, cut it into pieces and place it in the blender.

  • Blend intermittently for a few minutes to achieve a nice smooth and as liquid as possible mixture.

  • Now strain the puree through a sieve.

  • Help pass it through with a spoon.

  • Add the sugar,

  • the cornstarch,

  • mix well with a whisk to dissolve any lumps.

  • Put it on the stove, bring to a boil, and let it thicken. Lower the heat and let it simmer for a few minutes.

  • Remove the pot from the heat, add a teaspoon of vanilla extract, divide

  • divide the mixture into molds, let it cool, and then place it in the refrigerator. Let it rest for at least 6 hours before consuming.
