- 8 tomatoes
- as needed extra virgin olive oil
- 1.76 lbs ground beef
- 1 egg
- as needed salt
- as needed parsley

How to Prepare Stuffed Tomatoes in Air Fryer
Let’s start preparing the stuffed tomatoes in air fryer. First, prepare the filling: place the ground beef in a bowl, wash and finely chop the parsley in the bowl, add the egg, salt, pepper, and some oil, mix well to obtain a homogeneous mixture.
Add 4 full tablespoons of breadcrumbs, mix everything; you should obtain a compact mixture. If necessary, add more breadcrumbs; cover the bowl with cling film and let the mixture rest in the fridge for 30 minutes.
Wash the tomatoes, remove the part where the stem was attached with a knife, and using a knife, enlarge the part and chop the pulp into pieces, placing it in the baking dish that you will then put in the air fryer basket. Using a teaspoon or a melon baller, scoop out the tomatoes and place the pulp in the dish.
Take the filling out of the fridge and fill the tomatoes with the meat. If you have leftover ground meat, form meatballs and place them in the dish alongside the tomatoes. Add a pinch of salt, pepper, and extra virgin olive oil—I used the sprayer.
Place the dish on the air fryer basket and cook at 375°F (190°C) for 30 minutes, occasionally opening the basket and basting the tomatoes with the juice in the dish to keep them soft.
Serve the stuffed tomatoes in air fryer hot or let them cool if you wish to eat them at room temperature or cold.
How to store Stuffed Tomatoes in Air Fryer
Store them in the refrigerator for 2/3 days or freeze them for 2 months and defrost and reheat them as needed.
