Ingredients for preparing the Appetizer with cheese and venison salami
- 1 sheet puff pastry (rectangular)
- 20 slices venison salami
- 3.5 oz spreadable cheese
- to taste salt
- to taste pepper
- to taste extra virgin olive oil
- 1 lemon (unwaxed)
- 1 orange (unwaxed)
- 1 lime (unwaxed)
How to prepare the Appetizer with cheese and venison salami
Let’s start preparing the Appetizer with cheese and venison salami, unroll the puff pastry and use a cookie cutter with a diameter of about 4 inches to cut out disks,
which you will position in a muffin tin.
Pierce the bottom of the baskets with a fork,
bake them in a preheated static oven at 356°F (180°C) for 20 minutes. If you see that the puff pastry puffs up during baking, don’t worry, open the oven and pierce the puff pastry further with the fork.
In the meantime, while the puff pastry is baking, prepare the filling. Pour the spreadable cheese into a bowl, work it with a fork, add a pinch of salt, pepper, a drizzle of extra virgin olive oil, and mix well.
Now add some grated lemon zest.
Add the lime zest,
the orange zest
and mix well to blend all the ingredients.
When the puff pastry baskets are ready, remove them from the oven, place them on the serving plate, and let them cool.
Using two spoons, fill the baskets with the citrus-scented cheese cream.
Take 3 or 4 slices of venison salami and slightly overlap them.
Fold the bottom part
and roll them up.
You will obtain a salami rose,
that you will place in the center of the cheese-filled basket, press the rose lightly so that it slightly penetrates the cheese, in this way the cheese will hold it, and you won’t risk it opening.
If you like, decorate the baskets by adding some oregano leaves, or mint or basil, depending on what you have available, it will add color to the baskets and make them even more beautiful. Serve the Appetizer with cheese and venison salami immediately or store it in the fridge for a few hours.
