EGGS IN PUFF PASTRY CRUST

Eggs in crust is an easy-to-make main dish perfect for special occasions. The eggs in puff pastry crust are also a great idea for Easter, I used bacon, alternatively, you can use speck or prosciutto. The hard-boiled eggs in crust are also great to take on a picnic or serve at a buffet. Ingredients to prepare eggs in crust

  • 4 eggs
  • 9 oz spinach
  • 2.5 oz smoked bacon
  • 2 rolls puff pastry (rectangular)
  • 1 egg yolk
  • to taste sesame seeds
  • to taste salt
  • to taste extra virgin olive oil

Procedure to prepare eggs in crust

  • Let’s start preparing the eggs in crust, clean the spinach, wash them well, and pour some extra virgin olive oil into a pan, add the spinach, place on the stove, and cook for 15 minutes with the lid on, stirring occasionally. Adjust with salt and let any excess water evaporate.

  • Pour water into a small pot, add the eggs, and cook for 6 minutes from when the water starts boiling, then place the eggs under cold running water. This way, the eggs will peel easily. Peel the eggs and set them aside.

  • Unroll a roll of puff pastry, cut 4 half-inch strips, which will be used later for decoration. I used a wavy cutter. Then cut the puff pastry to obtain 4 rectangles. Place some spinach in the center of each rectangle, then take the hard-boiled egg and wrap slices of smoked bacon around it, I used 3 for each egg. Place the egg with bacon on the spinach and cover it with more spinach.

  • Take the second roll of puff pastry and cut it crosswise to have 4 rectangles. Take a rectangle of pastry and lay it over the egg, seal the two horizontal edges and close like a candy, spreading the puff pastry on the sides, decorate the egg’s surface with a strip of puff pastry you set aside.

  • Beat the egg yolk with a fork, and brush the eggs in crust with the yolk, then sprinkle with sesame seeds.

  • Preheat the ventilated oven to 350°F, and when it’s hot, bake and cook for 15 minutes, then cover with aluminum foil, switch the oven from ventilated to static, and continue cooking for another 10 minutes. Serve the eggs in crust just ready and hot.
