Ingredients to prepare Ricotta and Spinach Puffs
- 1 sheet puff pastry
- 9 oz spinach
- 3.5 oz ricotta
How to prepare Ricotta and Spinach Puffs
Let’s start preparing the ricotta and spinach puffs, clean the spinach, wash them and let them dry. Pour a drizzle of extra virgin olive oil into a pan, add the spinach and cook them for 10 minutes with a lid, stirring occasionally, then remove the lid and continue cooking until they have absorbed the water that naturally comes out during cooking, be sure not to add water.
Pour the ricotta into a bowl and add the spinach, mix carefully until you get a nice homogeneous mixture, you will see that the spinach will crumble and incorporate well with the ricotta.
Unroll the puff pastry, using a small bowl or a pastry cutter or a small plate, cut out circles with a diameter of 4.7 inches, not smaller otherwise you will not be able to make the puffs, rather larger. I cut out 5 circles from my puff pastry sheet.
Then cut each circle into 4 parts to obtain 4 wedges for each circle
On each wedge make 3 radial cuts, starting from the tip.
With the help of a teaspoon, take some filling and place it on the edge of each wedge.
Now take each wedge in your hand and bring the tip towards the rounded part and close the puff.
Preheat the static oven to 356°F. As you prepare them, place the puffs on the oven tray lined with parchment paper.
When the oven is hot, bake and cook for 20 minutes.
When the ricotta and spinach puffs are ready, take them out of the oven and let them cool before serving
