Ingredients for making Apple and Cream Puff Pastries
- 1 roll puff pastry (rectangular)
- 1 apple
- brown sugar
- 1 egg yolk
- 1.8 oz sugar
- 0.7 oz cornstarch
- 1 cup milk
- to taste vanilla extract
- to taste lemon zest
How to Make Apple and Cream Puff Pastries
Let’s start making the Apple and Cream Puff Pastries. First, prepare the custard, which needs to be cold when used.
In a saucepan, combine the egg yolk and sugar, and whisk together. Add the cornstarch, vanilla, and lemon zest, mixing well until smooth. Gradually add the milk to avoid lumps, then heat until thickened.
Allow it to cool, covered with plastic wrap pressed against the surface to prevent a skin from forming.
Once the custard is cool, peel the apples, remove the core, and slice them about a quarter-inch thick.
Preheat the static oven to 350°F. Unroll the puff pastry and place it on the oven tray, marking the halfway point to delineate the spaces clearly.
On half of the puff pastry, add spoonfuls of the custard and spread it out. Neatly arrange the apple slices on top of the custard. Fold over the other half of the puff pastry.
Brush the surface of the puff pastry with water and generously sprinkle with brown sugar. Cut into squares with a sharp knife without moving them. I cut the shorter side into 3 parts and the longer side into 4, making 12 squares.
Bake in the preheated oven for 15-20 minutes until the puff pastry is golden and puffed.
Once the Apple and Cream Puff Pastries are ready, take them out of the oven and let them cool before enjoying.
How to Store Apple and Cream Puff Pastries
Store the apple and cream pastries at room temperature for 1 day. They will still be good, but the puff pastry will no longer be crispy.
