Pancakes with whipped egg whites are tall and fluffy pancakes perfect for breakfast, a brunch, or a delicious snack. I served them with a raspberry coulis, but you can alternatively accompany them with fresh fruit, a strawberry coulis, or melted or spreadable chocolate. The sugar-free pancakes are best enjoyed freshly made, while still warm, but they remain fluffy even the next day. However, I assure you that they are fabulous as soon as they are prepared. You can cook the pancakes with honey in a pan or on a crepe griddle, or in a special pan with cavities to obtain round pancakes of the same size. I find a non-stick pan with a diameter of 5.5 inches works perfectly and doesn’t require greasing the bottom. I also recommend trying the VEGAN PANCAKES WITH BERRIES and the ORIGINAL AMERICAN PANCAKE RECIPE, as well as the savory versions SAVORY PANCAKES with salmon and avocado, SAVORY PANCAKES WITH CHEESE FILLING. Procedure for making pancakes with whipped egg whites
Let’s start making Pancakes with whipped egg whites. Melt the butter in the microwave, in a bain-marie, or in a small pot, being careful not to brown it. Separate the eggs and pour the egg whites into a bowl, add a pinch of salt, and whip them to stiff peaks with an electric mixer.
Sift the flour into a large bowl
Pour the yolks into the flour.
The melted and now cool butter.
A teaspoon of baking powder
Add two tablespoons of honey, lightly mix everything with a fork
Gradually pour in the milk, let it incorporate, and mix well to avoid lumps.
When the mixture is smooth and homogeneous, add the whipped egg whites and incorporate them with upward and downward movements to avoid deflating them. You will get a very creamy mixture.
Put the pan on the stove to heat it up; alternatively, you can use an electric crepe griddle, or a larger pan to cook several pancakes at once.
When the pan is hot, use a ladle to pour the mixture, without leveling it, as it will spread on its own.
When bubbles form on the surface, it’s ready to be flipped and cooked on the other side.
Continue this way until you finish the batter. You can cook multiple pancakes at once if using a larger pan.
Serve the Pancakes with whipped egg whites hot, freshly prepared, or at room temperature. You can add chocolate, strawberry or raspberry coulis, fresh fruit, or maple syrup.
