Ingredients to prepare the glazed puff pastries
- 1 sheet puff pastry (rectangular)
- 4 1/4 oz powdered sugar
- 2/3 oz egg white
- 1 3/4 oz apricot jam
Procedure to prepare the glazed puff pastries
Let’s start preparing the Glazed puff pastries, take the apricot jam and pass it through a sieve to make it very smooth and creamy, then transfer it to a piping bag with a very fine nozzle.
Pour the egg white into a small bowl and beat it with a fork, then add the powdered sugar in two batches and continue working it with the fork until you get a smooth cream without lumps.
Unroll the rectangular puff pastry, cut it in half lengthwise and then from each half, make 10 pastries, thus obtaining 20 pastries in total.
Place the pastries on a baking sheet with its parchment paper. With a brush or a teaspoon, add the glaze to each pastry, covering the entire surface well.
Now take the piping bag with the jam and create a zigzag over the glaze, making 4 close together. Continue this way for all the pastries.
Turn on the static oven to 356°F for about 20 minutes, check the cooking as the time may vary from oven to oven. The Glazed puff pastries should be golden but be careful because they can burn quickly, so keep an eye on them for the last 5 minutes.
